Our take

Why we chase these breweries

Most of the beer worth drinking right now is made in small batches and sold fast. Several of the breweries below rarely brew the same beer twice, and plenty of their releases never travel far beyond their own taprooms.

So we follow the brewers we admire, bring their releases in as they come and get the cans into our coolers while they are fresh. New drops move quickly, which is why the newest arrivals sit near the top of this page.

Know your styles

Hazy and juicy

Soft, cloudy and low in bitterness. Late hop additions push tropical fruit, citrus and stone fruit. Drink them fresh and cold.

West Coast and pale

Clear, dry and bitter in the best way. Pine, resin and grapefruit with a crisp finish. The style California made famous.

Lagers and pilsners

Cold-fermented and patient. Crisp, bready and clean, built for a second round. Small brewers are making some great ones.

Dark and roasty

Roasted malt brings coffee, cocoa and toffee. Stouts run fuller and richer; porters stay a little lighter on their feet.

The breweries we chase

Seven California brewers, and why each one earns a spot in our cooler.

01Berkeley / Oakland / San Francisco, California· Est. 2013

Cellarmaker Brewing Co.

San Francisco brewery known for ultra-fresh, rotating hoppy beers.

Cellarmaker opened in 2013 on Howard Street in San Francisco's SoMa neighborhood. Its founders, Tim Sciascia, Connor Casey and Kelly Caveney, all met at Marin Brewing Company, where Sciascia brewed for five years.

The name reflects their belief that a beer is shaped as much in the cellar, during fermentation and aging, as on brew day. The brewery made its name with hoppy pale ales and IPAs, in both clear and hazy styles, alongside small experimental batches.

I never want a Cellarmaker customer to be sold a less-than-stellar product, whether they know it or not.

Tim Sciascia, co-founder and brewer, to Craft Beer & Brewing (2016)

Why we carry them

A hometown favorite. Cellarmaker's IPAs are at their best fresh, so grab whatever just came in and drink it soon.

02San Francisco, CA· Est. 2016

Barebottle Brewing Co.

Bernal Heights brewers with a sense of humor and serious technique.

Barebottle opened in San Francisco's Bernal Heights in 2016. The names on the cans are playful and very online; the beer inside is precise.

The range runs from crisp West Coast IPAs to soft, lush hazies, and the releases rotate often.

Why we carry them

Local, inventive and consistently good. Barebottle is the brewery we point to when someone wants to know what San Francisco tastes like right now.

03Berkeley, CA· Est. 2015

Fieldwork Brewing Co.

No core lineup, ever. Every release is a fresh experiment.

Fieldwork opened in Berkeley in 2015 and has grown to taprooms across Northern California. Its whole identity is rotation: new hop combinations, new techniques and seasonal ingredients, release after release.

The hazy and juicy IPAs built the following, but the pilsners deserve just as much attention.

Why we carry them

Few breweries stay this consistent while changing this often. Whatever Fieldwork can is in the cooler this week, it is worth trying.

04Santa Cruz, CA· Est. 2015

Humble Sea Brewing Co.

Coastal Santa Cruz brewing with big, tropical aromatics.

Humble Sea brings a laid-back Santa Cruz attitude to some very serious hop work. Their double dry-hopped foggy IPAs lean into pineapple, mango and stone fruit.

Limited seasonal releases come and go quickly, so the lineup here changes often.

Why we carry them

Bright, aromatic and easy to love. Humble Sea is our answer when someone asks for a hazy IPA that tastes like a day at the beach.

05San Diego, CA· Est. 2016

Pure Project

San Diego brewing with natural ingredients and sustainability at the core.

Pure Project opened in San Diego's Miramar neighborhood in 2016 with a focus on natural ingredients and sustainability. Their murky IPAs show off rare hop varieties with a bright Southern California character.

Look out for their limited farmhouse and fruited releases too.

Why we carry them

Murky, soft and full of hop flavor, with a conscience behind it. Pure Project shows you can brew responsibly and still make some of the best IPAs on the West Coast.

06Capitola, CA· Est. 2012

Sante Adairius Rustic Ales

Cult-status farmhouse and barrel-aged ales from the Santa Cruz coast.

Adair Paterno and Tim Clifford opened Sante Adairius in Capitola, just outside Santa Cruz, in 2012. SARA built its reputation on Belgian-inspired farmhouse and wild ales aged in wine and spirit barrels.

Those bottles are among the most sought-after in California, and the brewery's hoppy cans have a following of their own.

Why we carry them

SARA is the brewery serious beer drinkers travel for. When their releases reach us, we treat them accordingly.

07Monterey, CA· Est. 2014

Alvarado Street Brewery

Monterey's hop-forward flagship, playful on the label and serious in the glass.

Alvarado Street opened on its namesake street in downtown Monterey in 2014. The brewery pushes hop-forward styles hard, with double and hazy IPAs built on Citra, Mosaic, Strata and more.

The music-inspired branding matches the creativity of what is inside the can.

Why we carry them

Big on hops, never sloppy. Alvarado's IPAs are a reliable favorite in our cooler.
