Their story
Ancient Olive Trees is a family company based in Marin County and run by Aaron Mount. The name says it plainly: its extra virgin olive oil comes mainly from Arbequina olives on trees more than a hundred years old.
Alongside the oil, the company makes an aged balsamic vinegar from Modena, bottled in California, and a dirty martini juice.
How it's made
The olives are picked early, while still green, and cold-pressed soon after harvest, which keeps the oil fresh and grassy. The balsamic is aged up to 18 years in Modena before being bottled in California.
