Their story
Carboniste is the work of husband-and-wife team Dan and Jacqueline Person. Dan learned sparkling wine during three years at Schramsberg, with time spent in Burgundy and at Larkmead in Napa. Jacqueline spent years as a wine consultant.
The couple found that classic French sparkling techniques did not always suit California fruit, so they set out to make sparkling wine their own way. Their best-known bottle is a sparkling Albariño, a grape rarely seen with bubbles.
How it's made
Carboniste works with grapes like Albariño from the Sacramento Delta, Pinot Noir, Pinot Grigio and Chardonnay. Rather than following one set method, each wine is handled differently depending on the fruit, from pet-nats to extra brut rosé.

Why we carry them
We love the sparkling Albariño for its bright, salty snap. It is a great California bottle for oysters.
