Their story
Guittard's story begins with Étienne Guittard, who left Tournus, France, for California in the 1850s hoping to strike gold. Prospecting in the Sierra did not pan out, but the shopkeepers who had traded for his French chocolate urged him to make it himself. After saving for equipment back in Paris, he opened a chocolate business on Sansome Street in San Francisco in 1868.
The company moved to Burlingame in 1954, when its San Francisco site was taken for the Embarcadero Freeway. It is still run by the Guittard family, now led by Gary Guittard, and calls itself the oldest continuously family-owned chocolate company in the United States.
How it's made
Guittard makes its chocolate at its Burlingame plant, drawing on original family formulas and traditional French methods. The range runs from professional couverture used by pastry chefs to baking chips, cocoa powder, and bars for home bakers.
