Their story
Le Rocher is a small clairin distillery in Pignon, in northern Haiti, run by Romulus Bethel, one of the best-known names among the country's village distillers. It sits about an hour's drive over dirt roads from the town of Saint-Michel-de-l'Attalaye.
Bethel, a religious man, named the distillery after the Gospel image of a house built on rock. For years his spirit was sold locally, and in 2017 he agreed to bottle it for drinkers outside Haiti for the first time.
How it's made
Unlike many clairins made from fresh cane juice, Le Rocher starts with cane syrup. It is distilled in a pot still, with the syrup heated slowly to keep its aromas, then bottled at still strength with no water added.
Why we carry them
We love Le Rocher for anyone curious about rum in its rawest, most local form. It is bold and earthy, so try a small pour neat before mixing.
