Their story
NON comes out of Melbourne, where founder Aaron Trotman set out to make a non-alcoholic drink with the structure people look for in wine. Trotman brought a background in personal care to the problem, borrowing ideas from perfumery about how layered flavors are built.
Rather than taking alcohol out of wine, NON builds each drink from scratch in a purpose-built lab in Melbourne. The bottles carry pairings like Salted Raspberry & Chamomile and Lemon Marmalade & Hibiscus, aimed at the dinner table rather than the soda aisle.
How it's made
Each NON is developed from the ground up using kitchen techniques such as roasting, toasting, stewing, sous vide, macerating, steeping and brewing. The team balances tannin, acidity, salinity and floral notes to echo the feel of wine at 0.0% ABV. The range is vegan, gluten-free and halal certified.
