Their story
Olive & Sinclair is the Nashville chocolate company of Scott Witherow, who has worked in kitchens since he was 14. He trained at Le Cordon Bleu in London and cooked in England and the United States before turning to chocolate.
Witherow formed the company in late 2007 and spent the next two years developing what he calls Southern artisan chocolate. In the early days he roasted beans in an oven, cracked them by hand and separated nibs with a hair dryer, making just a few pounds at a time.
Alongside bars, the company makes Southern-leaning treats such as duck fat caramels and bourbon nib brittle.
How it's made
Olive & Sinclair stone grinds its chocolate in small batches, pairing single-origin cacao beans with pure brown sugar instead of white sugar. The result is a rustic texture and a deeper, molasses-like sweetness.
Why we carry them
We love how Olive & Sinclair gives chocolate a Southern accent. The brown sugar and stone-ground texture make their bars stand apart from smoother European styles.
