Their story
Saltverk began with Björn Steinar Jónsson, who was studying engineering and working in restaurants in Copenhagen when he came across records of an old salt farm in Iceland's Westfjords, about 400 km from Reykjavik. He ran his first salt-making experiments there in the summer of 2011.
He set out to make something the people of the Westfjords could be proud of, and chefs took notice early. DILL, Iceland's first Michelin-starred restaurant, was the first kitchen to use the salt.
How it's made
Seawater from the fjord is evaporated using only geothermal heat from local hot springs, reviving a method used at the site centuries ago. The flakes are harvested by hand. Beyond the plain flaky salt, the range includes a black lava salt colored with activated charcoal and a blend with Arctic thyme.
