Their story

Weak Knees is the signature sauce from a small Brooklyn condiment company started by Casey Elsass and Morgen Newman, first under the name MixedMade and now sold as Bushwick Kitchen. The pair had been making their own Sriracha at home for years before they turned it into a business.

Looking for a way to stand out in a crowded Sriracha market, Elsass hit on the idea of starting with gochujang, the fermented Korean chili paste, instead of fresh chiles. Weak Knees Gochujang Sriracha came out in 2015 and became the company's best-known product.

How it's made

Raw gochujang is simmered overnight with the classic Sriracha aromatics of garlic, vinegar and sugar. The result is a thick, squeezable sauce that pairs the deep, slightly sweet heat of gochujang with Sriracha's tang.

Why we carry them

Weak Knees has more depth than a standard Sriracha, with a savory, fermented edge. We like it on eggs, fried rice and in a Bloody Mary.
