Their story
Wolfburn sits in Thurso, a town on the far northern coast of mainland Scotland. The name goes back to 1821, when William Smith founded a distillery beside the Wolf Burn stream just west of town. By 1826 it was the largest distillery in Caithness. It went quiet sometime around the 1860s, and little survived of it.
In 2012 a small private group won approval to build a new Wolfburn about 350 meters from the original site. Distilling started in early 2013, and the first whisky was bottled in 2016. The distillery is owned by Aurora Brewing.
How it's made
Water comes from the Wolf Burn, the same stream that gave the old distillery its name. The spirit runs through a single pair of copper stills, one wash and one spirit. It matures in a mix of casks, including American oak bourbon barrels, quarter casks and oloroso sherry casks.
Why we carry them
We like that Wolfburn brings back a name from Scotland's whisky past with a fresh, young spirit. It is a good bottle for anyone curious about Highland malt beyond the big names.
