Their story
XILA comes from Flor de Luna, a distillery in Mexico City founded in 2015 by former bartender Hillhamn Salome. The company is fully owned by women and its spirits are made by women, part of Salome's aim to support women in the Mexican drinks trade.
The name means woman in Zapotec, one of the Indigenous languages of Oaxaca, where the base spirit comes from.
How it's made
Espadín mezcal from a family palenque in Oaxaca is macerated for about a week with roasted pineapple, ancho chile from Puebla, cinnamon, clove, black pepper, hibiscus and lavender. It is then sweetened with house-made syrup, bringing it down to about 20 percent alcohol.
Why we carry them
We like XILA in a spritz or splashed into a margarita; the chile and pineapple give agave cocktails warmth without much effort.
