Their story
Artequeso is a family-owned farm at La Prudenciana, a property in Tembleque in the province of Toledo, about 100 kilometers south of Madrid. The family has raised Manchega sheep there for decades, the breed whose milk defines Manchego cheese.
The farm makes Manchego DOP at several ages, from young semi-cured wheels to an añejo aged a year or more. Its cheeses have won recognition at the World Cheese Awards and the World Dairy Expo.
How it's made
Raw milk from the farm's own Manchega flock is set with animal rennet and no preservatives. The curd is molded and pressed for several hours, salted in a sea salt brine, and then aged under a natural coating free of antibiotics.

Why we carry them
This is Manchego the traditional way, from one farm's sheep and raw milk. We suggest trying the younger and older wheels side by side to taste how the cheese changes.
