Their story

Beemster cheese comes from the Beemster polder in North Holland, land reclaimed from the water in 1612 that sits about four meters below sea level. The cows graze on grass grown in its sea-clay soil.

Local dairy farmers began organizing into cooperatives in 1901, and after a series of mergers those groups became CONO Cheesemakers in 1991. The cooperative, made up of a few hundred farming families, still makes Beemster today, and it was named a supplier to the Dutch royal court in 2001.

How it's made

Beemster is a hard cow's milk cheese made in a similar way to Gouda, using milk from the cooperative's own farms. The curd is stirred by hand, and the wheels ripen in changing temperature and humidity conditions as they age.

Why we carry them

We like aged Beemster on a cheese board for its nutty, slightly sweet flavor and those little crystals. It is also great grated over pasta.
