Their story
Bachan's is named for Justin Gill's grandmother, his bachan, a second-generation Japanese American from Sebastopol, California. Her family made big batches of the sauce to give away as holiday gifts, and the recipe passed down to Gill's parents and then to him.
She lived through hard years, including time at the Amache incarceration camp in Colorado during World War II. Gill started selling the sauce in June 2019, keeping the family recipe at the center of the brand.
How it's made
When distributors pushed him to dilute and pasteurize the recipe, Gill found it changed the taste and texture. He spent two years developing a cold-fill process that keeps the sauce close to the homemade version. The original sauce has just ten ingredients, and the Yuzu version uses yuzu from Japan.
