This sparkling white wine from Tarragona, Spain, is made from a blend of Macabeo, Xarel lo, and Parellada grapes. Produced by Vinicola Nulles, a unique wine co-operative that unites 90 growers in a historic 'Cathedral' winery, it symbolizes the community's resilience against the phylloxera crisis. The winery has preserved its original fermentation vats and underground cellars for over a century while continually modernizing its methods and now operates with organic certification. The grapes, grown organically on calcareous soil in a Mediterranean climate, are aged in bottles for 24 months.
