Their story
Monte Nevado is a family ham producer based in Carbonero el Mayor, a town in the province of Segovia. The company marked 125 years in 2023 and is now run by the fourth generation.
It cures hams at sites in Segovia, La Rioja, and Guijuelo, and sells in France, the United States, and Canada. Monte Nevado is also known for reviving the Mangalica, a curly-coated Hungarian pig breed that was close to disappearing in the 1990s, which it raises on its own farms in Hungary. Its serrano and Iberian hams have won top national awards in Spain.
How it's made
Hams dry in rooms set in natural surroundings, with windows that let in fresh air, which slows the cure. Each leg is checked and graded individually, and serrano hams cure for at least 24 months. Mangalica pigs are raised in Hungary on maize, wheat, and pasture.
Why we carry them
Monte Nevado's serrano is a reliable choice for a Spanish-style spread. Slice it thin and let it come to room temperature first.
